I am a lover of oatmeal. It had always been a staple in my home growing up and I’ve carried that into my own home. My toddler almost always has some form of oatmeal for breakfast. I know a lot people get thrown off by the texture of regular cooked oatmeal and I’m almost positive that if you’re one of those people you’ll definitely love this!

This delicious oatmeal is everything you’d need in a breakfast, its so good it almost tastes like dessert. And the best part about it is that it’s so easy to make and packed with all things healthy. Chocolate is good for the soul so that counts too right?

I love to serve it with some thick and creamy Greek yoghurt or just milk works great too.

All you need for this is two bowls; one for your dry ingredients and one for the wet ingredients, a baking dish, (I used an 8X8 inch glass dish), a mixing spoon and your oven! Sounds simple right? Ok, lets make this!

SUBSTITUTIONS AND TIPS

  • Instead of regular butter, you can use coconut oil or avocado oil.
  • This oatmeal is good in the fridge for up to 5 days so it is perfect for meal prep.
  • It freezes great too so you can make a double batch and freeze some for later and it will still reheat well.
  • You can top it with some fresh fruit and Greek yoghurt for a perfect breakfast.
  • I added chia and flax seeds just for nutritional benefits, so you can skip them and it won’t alter the taste or quality of the final product at all.
  • The chocolate chips can be substituted with any of your favorite fruits such as blueberries or strawberries for a lighter and fruitier version.
  • Add some walnuts or pecans for the added texture and nutritional benefit

Chocolate chip Baked Oatmeal

Ingredients
  

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ¼ cup ground flax meal (optional)
  • 2 tbsp chia seeds (optional)
  • 2 tbsp melted butter
  • 1 banana
  • 1 egg
  • 2 cups milk
  • ¾ cup semi sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F
  • Mix all dry ingredients in one large bowl.
  • In a separate bowl, mash the banana. To that, add in the egg, butter and milk and whisk it all together.
  • Add the dry ingredients into the wet mixture as well as the chocolate chips and mix well.
  • Pour mixture in a buttered 8X8inch pan and bake for 45 minutes
  • Remove pan from the oven and let it sit for 5 to 10 minutes to cool and set
  • Enjoy!
